The best mushroom for inflammation is Chaga.
Chaga is the most potent anti oxidant ever discovered on earth.
It's also fascinating, it's extremely rare and difficult to find so it is often cultivated.
It grows as a large dark almost ash coloured "burl" type growth most commonly on Oak or Birch trees.
Chaga was used as a coffee substitute in the wars of the last century and used for millenia in eastern medicine.
Mostly found in the northern hemisphere, Chaga is even rare in places such as England but much more discoverable north of the border in Scotland.
Believe it or not, Chaga, is cancer, or a "cankter" that grows on the trees. For 80 years it can be harvested and consumed. Inside the cankter is an orangey/brown powdered substance which is the consumed part- however, after 80 years of feasting and drawing out the trees' nutrients not only doe the tree slowly die from the Chaga cankter, after this critical point, the cankter or Chaga itself becomes poisonous to people.
Mushrooms are weird, they are almost alien, if you've ever grown them at home you know this. They don't seem to grow up but seem to consume the space around them and absorb it- they are beautiful, more closely related to people than plants and one of the first multi-cell organisms to exist.
Can you tell we love mushrooms? And, especially Chaga.
